Hi again. As promised, here is the results of my sourdough experiment. So here is my sourdough just as I put in the oven.
See how it's flat? That's bad. I think it's because I didn't read the recipe very carefully and used regular all purpose flour instead of bread flour. I blame Cook's Illustrated for unclear directions. If I see unbleached all purpose flour with 11 to 13 percent gluten content, well to me that's confusing. Or maybe I'm just dumb.





Anyways, this is how my bread turned out. Delicious! But flat. I think that's okay though. I'm trying it again later this week and maybe it'll be prettier. But it still tastes good and I think that's what counts.

You can't blame the recipe since I followed it and it was pretty. From the look of it you didn't knead it enough. It should have looked like a tight ball. Because you don't have a kitchenaid you have to knead it a lot longer than it says.
